The Black Pepper Butttermilk Biscuit Recipe


I love these buttermilk biscuits - easy to bake and enjoyed by all.

Pre-heat the oven to 450. Combine 4 cups of unbleached flour with 4 tsp of baking powder, 1 tsp of baking soda, and 1tsp of kosher salt. Cut a stick and a half of very cold good unsalted butter into small chunks and work it into the flour mix (or use a food processor, pulsing until the flour is somewhat 'grainy' in texture). Then mix in 1 and a half cups of buttermilk, and turn out the dough on to a lightly floured work area. Knead the dough and shape it into a large square about 1 inch thick. Cut out the biscuits, gathering up and reforming leftover dough for more cuts until all is used. Should place 9-12 biscuits on a parchment paper lined baking sheet. Brush some heavy cream on the top of the biscuits and sprinkle with ground black pepper (or not, if you don't like pepper). Bake for 15-20 minutes. Serve hot with good butter and strawberry jam.
